स्वाद लिनै पर्ने सिड्नीका सात नेपाली रेष्टुरेन्ट

खाना र स्वादका लागी हामी नेपाली पनि विश्वका अरू देश र तिनका निवासी भन्दा कम छैनौं। नेपालमा रहेको जातिय, सांस्कृतिक अनि परम्परागत विविधताले गर्दा हाम्रो भात–भान्छाको स्वादमा पनि विविधता थपेको छ। जसले गर्दा तराई, पहाड र हिमालको समिश्रण हाम्रो खानाको थालीमा समेत पाउन सकिन्छ। जसले हाम्रो जिब्रो र ‘टेस्ट बड’हरूलाई धेरै मात्रामा सन्तुष्ट पारिरहेको हुन्छ। ‘नेपाली जहाँ जहाँ छन्, नेपाल त्यहाँ त्यहाँ छ…’ भने झैं नेपाली खाना पनि नेपालीसँगै मुग्लान पसिसकेको मात्र छैन कतिपय देशमा त राम्रो पहिचान नै बनाएको छ।

अष्ट्रेलियाको विविधताले भरिएको समाजमा नेपालीहरू आर्थिक समुन्नतिको बाटोमा हिंडिरहेको जातिमा गनिन्छन्। नेपाली विद्यार्थी र स्थायी बासिन्दाको संख्या बढ्दै जाँदा नेपालीको रेष्टुरेन्ट र ‘फंगसन सेन्टर’हरूको संख्या पनि बढिरहेको छ। साप्ताहिक रूपमा हुने जमघट र नेपालबाट कलाकार ल्याएर गरिने विविध कार्यक्रमहरूको कारण पनि यस्ता रेष्टुरेन्ट र ‘फंगसन सेन्टर’हरूलाई बढावा नै दिईरहेका छन्। हुन त साताभर काम गरेर सप्ताहन्तमा रमाउने यहाँको शैली नै हो। भविष्यको लागी खास धेरै चिन्ता लिनु नपर्ने अवस्थामा पुगेपछी रमझममा लाग्नु स्वभाविक पनि हो। नेपालीहरूको बाक्लिंदै गएको संख्याका कारण नेपाली रेष्टुरेन्ट र ‘फंगसन सेन्टर’हरूको व्यवसाय पनि फस्टाएकै छ।

त्यसो त नेपालीहरूले पीआरका लागी लिने बाटोले गर्दा पनि रेष्टुरेन्टको संख्या बढेको हो भन्नेहरु पनि छन् अष्ट्रेलियामा। पढाई भन्दा पनि रेष्टुरेन्टमा काम गर्ने, सेफ हुने र पीआर लिने एउटा ट्रेण्ड नै बसेको थियो नेपालीहरूको। यो बाटोबाट पीआर लिनको लागी अंग्रेजी पनि खास नचाहिने भएकाले ‘किचन ह्याण्ड’ बनेर छिर्ने र ‘सेफ’ बनेर निस्कने बढि छन् अष्ट्रेलियामा भन्छन् यहाँका नामी माईग्रेसन एजेन्टहरू नै। कारण जे भएपनि सिड्नी र अष्ट्रेलियाका मुख्य शहरमा खुलेका नेपाली रेष्टुरेन्टहरूले नेपाली खाना र नेपाल चाहिँ चिनाई रहेका छन्। यद्यपी ‘मेनु’मा हुने भारतीय खानाको लामो लिस्ट र नाममा जोडिने ‘हिमालय’ ‘पाकिस्तानी’ ‘बंगलादेशी’ ‘ईन्डियन कुजिन’ जस्ता शब्दहरूले बजारका लागि गर्नुपर्ने संघर्ष चैं देखाउँछन्। सिड्नीमा टिक्न बिक्न सक्नुपर्छ खुसीको कुरा हो नेपाली खाना टिकेका पनि छन् र बिकेका पनि छन्। आखिर स्वादको कुरा जो न हो।
